Lapsi or Nepali Hog Plum is one of the popular fruit for making different kinds of pickles/achaar in Nepal. These plum-size fruits are native to Nepal. The pickles are prepared to be eaten instantly or are stored for more than a year. It has extremely sour taste with little sweetness when ripe. It is also used to make different varieties of sweets and snacks. Dry lapsi powder is also widely used in making jhol achaar or soup. You can see more usage of Lapsi in Nepal here.
I got this recipe from my friend’s mum, and the one she made is the best lapsi achaar I ever had.
Ingredients (सामाग्री)
½ Kg of Lapsi/Nepali hog plum (१/२ केजी लप्सी)
250 gm of Sugar (२५० ग्राम चिनी)
50 gm Coconut (५० ग्राम नरिवल)
50 gm Raisins (५० ग्राम किसमिस)
Salt (नुन)
Red Chilies powder (रातो खुर्सानीको धुलो)
Turmeric powder (बेसारको धुलो)
Asafoetida/Hing (हिंग)
Cardamom (सुकुमेल)
Fenugreek (मेथी)
Ginger (अदूवा)
Method (बनाउने तरिका):
Boil the lapsi until cooked- 15 mins under medium heat or 2 whistle on pressure cooker. Remove the seed after it is cooled and grind rest including lapsi skin.
(लप्सीलाई पानी हालेर पकाउने- १५ मिनेट मध्यम आचमा अथवा २ सिठी प्रेसरकुकरमा, चिसो भएपछि लप्सीको बियाँ छुटाउने र बोक्रा र गुदिलाई दुबैलाई Grinder मा पिन्ने)
Heat oil in a pan and add half a tablespoon of fenugreek.
(प्यानमा तेल तताउने र आधा चम्चा मेथी फुराउने)
Add finely chopped coconut and ginger, and fry it until light brown. Add hing and turmeric powder.
(स-सानो नरिवलको टुक्रालाई हल्का र अदुवालाई खैरो हुनेगरि पकाउने र त्यसमा हिंग र बेसारमा मिसाउने)
Then add the grinded lapsi, stir and cook it for sometime under medium heat.
(त्यसमा Grind गरेको लप्सी राखेर चलाउने र मध्यम आँचमा एकछिन पकाउने)
Add salt, red chilies powder, and sugar, and cook it for around 5 minutes
(त्यसमा स्वाद अनुसार नुन र रातो खुर्सानीको धुलो मिसाउने, र संगै चिनी राखेर ५ मिनेट पकाउने)
Grind the cardamom and add it to the mixture, and the sweet laspsi pickle is ready
(सुकुमेललाई पिसेर र किसमिस लप्सीमा राखेर चलाउने, गुलियो लप्सीको अचार तयार हुन्छ)
You can store this pickle for more than 2 weeks in glass bottle.
(यस अचारलाई तपाईले सिसाको बोतलमा राखेर २ हप्ता भन्दा बढी स्टोर गर्न सक्नुहुन्छ)
