Here is a simple recipe of homemade paanipuri… probably one of the most popular kind of snacks among girls/women.
Ingredients
Puri (made from semolina/suji and plain floor)
5 medium size Potatoes
1 medium size Onion
1 tbs Chaat Masala
1 tsp red chilli powder
2-3 green/red chillies
½ tsp of roasted Cumin powder
½ tsp of roasted Coriander powder
2 tbs Panipuri masala
1 cup of fresh coriander (chopped)
Vegetable oil
Methods
To make puri: I bought puri for local market for ease. They are dry and can be stored for months. But you can simply make it from scratch. Mix suji, plain floor, baking soda, some salt and water to make soft but firm dough, roll in into small circle and deep fry in oil.
In a deep frying pan, add a cup or two cups of vegetable oil and add puri (4-5 at a time, depending on your width of pan) when oil is hot enough to fry. Pour the hot oil over the puri and it puffs up looking like a table tennis ball. Turn the puri to other side and fry for other few seconds until it becomes light brown. Transfer the fried puri in dry plate… you can drain excess oil using kitchen towel.
To make fillings: Boil the potatoes until cooked and peel the skin. In a bowl, smash potatoes with your hand. Add dices onions, chilies, coriander leaves, chaat masala, cumin powder, coriander powder and red chilly powder, crack few fried paanipuri, pour a tbs of vegetable oil and mixed it together. You may add some soaked peas too.
To make paani In a deep bowl, add two tbs of paanipuri masal and add ½ litre of drinking water. Add some limejuice and fresh coriander leaves (finely chopped) and stir it well.
(You can also easily find paanipuri masala and chaat masala in the market.)
For serving: Make a small hole in puri tapping with your finger, fill it with stuffing/fillings and pour some paani. Enjoy mouthful of tangy, spicy, crunchy homemade paanipuri.
